WHere is a simplified interpretation of a beverage featured on our latest menu. It's a party-sized pre-mixed that's bursting with essence of a Christmas time, which makes it perfect for a festive gathering. Save the extra cordial for morning drinks, sweets, or for more rounds of this cocktail.

Makes enough for 10 guests
For the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
For the Citrus Syrup: Place every ingredients into a pot, bring to a gentle boil, stirring to dissolve. After that, take off the stove and leave to cool fully. Decant to a sealable bottle, close it and store chilled, it will last for about a month.
Preparing the Premix: Pour every liquid ingredients into one big jug, allow it to infuse for 60 minutes, then strain , ideally through cheesecloth, making it perfectly clear.
For serving: Add 85ml of your cocktail base to a stirring glass containing ice, gently stirring carefully for a minute until cold. Pour to a chilled martini glass or equivalent, garnish with a few cranberries and finish by giving it a brief mist with the mandarin essence over the top.
